Meatball Lo Mein . This is comfort food at it’s finest! Spaghetti & Meatballs, but with a Chinese Twist... because why not? . When I first posted this Sauce recipe, I raved about how yummy and easy it was. . Second time around, and I stand by my previous statement.. it’s so good. And it really does taste better than Take Out! . Sauce: 1/3 Lite Soy Sauce 1 Tbsp Worcheshire Sauce 2 Tbsp Brown Sugar 1/2 Tsp Garlic 1/2 Tsp Grated Ginger 1 Tsp Canola Oil
This is a Butternut Squash Casserole. . It has a layer of sautéed Onions with Green Bell Peppers & Sausage in a Marinara Sauce. On top of this deliciousness sits a layer of Mozzarella Cheese 🤤. . So filling, so easy and, best of all, I get to eat the leftovers tomorrow.. if they survive that long 😋
Instant Pot Black Bean & Chorizo Soup . Rainy days only mean one thing: It’s Soup Time!! . Funny story: when I was a kid I used to hate soup. Soup meant sick food. . It all changed once I left home for college, I missed my Mom’s soup so bad when I was sick or it was raining and cold. . So I’d called her and she would explain step by step how to recreate her delicious recipes. . Today, I’m creating my own versions 🤗. . Ingredients: 2 1/2 cups Chicken Stock 2 cans Black Beans (drained) Green Bell Pepper Red Bell Pepper Onion Garlic 1 tsp Cumin 1/2 tsp Chili Powder 1 tsp Oregano Salt & Pepper Olive Oil Chorizo (2 Links) . Press Sauté. In Olive Oil, sauté Onions for 3-4mins before adding Garlic & Bell Peppers; continue sautéing for 2-3 mins longer. Cancel Sauté function. . Add Beans and stir to combine, add Stock, Cumin, Oregano, Chili Powder, Salt & Pepper then stir. . Press Pressure Cook & Set for 7mins. . While this is cooking, cut the Chorizo in small rounds, cook them for a few mins in the pan, then drain the excess fat and set aside. . Allow for a Natural Pressure release (5min), then open the lid and stir in the Chorizo. Serve & Enjoy!

Meatball Subs with Creamy Vodka Sauce . These delicious Subs came together in no time! Perfect for a lazy Saturday, it was super tasty, hassle free and with minimal cleanup! . The Meatballs took 10min in the Air Fryer. While that was cooking, I brushed the buns with a bit of Butter and gave them a quick toast in the oven. . Once the Meatballs are done, assemble the Subs and place in the oven until cheese is melted. . Ingredients: Buns Meatballs Mozzarella Basil Preggo Creamy Vodka Sauce
Eggplant Caprese Rollatini . Eggplant is such a versatile veggie, it works with a lot of cuisines and flavors; you can fry them, bake them, roast them, grill them.. we can have a real Forrest Gump moment here, so let’s say the list goes on. . This time around they served as a side dish to a Grilled Herb Lemon Chicken. . Each roll is stuffed with a slice of Tomato seasoned (Salt, Pepper and a Spritz of Balsamic Vinegar), Mozzarella & Chopped Basil. Its cheesy, healthy and delicious! . Ingredients: Sliced Eggplant Marinara Sauce Tomato Mozzarella Parmesan Cheese Basil Balsamic Spritzer Salt & Pepper
Seafood & Chorizo Rice . Shoutout to my local grocery store for having this Seafood Rice on their Prepared Food Menu. . It had Shrimps 🍤 🦐 Fish 🐟 & Mussels, pretty tasty on its own, but I decided to enhance those flavors...I couldn’t help myself 😋. . I sautéed some Chorizo with Garlic, then added the Rice, a squeeze of Lemon, Olive Oil, Salt & Pepper. . This was incredibly delicious and a huge time saver 💁🏻♀️ With a little help, I was able to cut down on cooking time and enjoy some extra Netflix & Chill.
Sizzling Scalloped Potatoes . Creamy, Cheesy & Incredibly Delicious. Those are the words I would use to describe this dish. . This is melt-in-your-mouth good, plus it’s super easy to make and goes great with practically any protein. . Secret Ingredient: Extra Mozzarella in the middle layer 🤤. . Ingredients: Potatoes Mozzarella Heavy Cream Butter Mustard Basil Thyme Salt & Pepper
Mozzarella & Tomato BBQ Burger . There’s really nothing better than when you bite down on a burger and it’s an explosion of juicy flavors 🤤 A perfect companion of meat, condiments, cheese & bread. Seasoned with Herb Seasoning, Garlic, Salt, Pepper and brushed with BBQ Sauce on both sides. . Yep… that’s this burger! Perfection with a side of French Fries seasoned with Garlic, Paprika, Basil, Thyme, Salt & Pepper. . Quick & Yummy just like the Doctor ordered!
Leftover Creation 👩🏻🍳: Turkey & Blue Cheese Penne . I love it when I can randomly create a yummy dish from yummy leftovers. . This creamy, zesty and hearty dish came together super quickly, which is an added bonus to how incredibly delicious it was. To make the sauce I used Heavy Cream, Butter, Garlic, Leftover Turkey, Blue Cheese, Salt & Pepper. All one pot! 👌🏼
Turkey Rice Bowl . This dish was so easy to make that I almost feel like it shouldn’t even taste as good as it did 😋 I had ZERO desire to cook today but, as always, I wanted something light, yummy and comforting. . Yes, I know... laziness and desire to eat yummy food don’t always match. Specially on days where take out ain’t an option 🤣. . So, the first thing I decided was my famous Microwave White Rice as my side dish. . Then, inspiration hit me! I ground up a few Turkey Burgers I had in the freezer and cooked them with tons of spices 👩🏻🍳. . It was bursting with so much flavor, and it had a wonderfully mild spicy kick to it! 🌶. . Ingredients: Ground Turkey Burgers Bell Pepper Tomato Onion Garlic Oregano Basil Thyme Cilantro Creole Seasoning Chili Flakes Salt & Pepper
Pork Schnitzel & Cheesy Mashed Potatoes . This healthy version of Pork Schnitzel is made entirely in the Air Fryer; a.k.a. no fussing with oil. And still Crunchy, Tender & Crispy!!! . I love saying Schnitzel! SCHNITZEL!! SCHNITZEL!! My husband and I have been annoying each other non stop shouting Schnitzel just randomly all day long 😛. . Now, let’s talk about that Mash 🤤 Potatoes with Butter & Muenster Cheese it’s deliciously cheesy and ohhh soo buttery, a perfect side dish. . Ingredients: 6 Pork Cutlets 1/3 Cup Flour 2 Eggs 1 1/4 Cup Italian Seasoned Panko Garlic Salt & Pepper . Season the Pork with Garlic, Salt & Pepper on both sides. In 3 separate bowls put Flour, Beaten Eggs & Panko. . Dip the Pork in the Flour, Egg & Panko coating both sides (in that order). Spray with Canola Oil on both sides. . Warm the Air Fryer first. After it's done, place the Pork in the Air Fryer and Select Pork Feature (370F) for 17mins; flip halfway and Voila! Yumminess Delivered!
Chicken Shawarma . This is sooooooo good! No, seriously! This is da bomb dot com right here. The chicken was juicy with just the right amount of spice and yummy Mediterranean flavors. . I’ve been craving this dish for days, and today I set out to do my little experiment. I’m pleased to say it was a total success! . I made Chicken Shawarma Tacos, but you can enjoy it with sides like white rice, naan, grilled veggies.. ohh the possibilities are endless. . All I know is this recipe is definitely getting a spot on the roster. . Ingredients: 4 Chicken Breast Red Onion (halved) . Marinade: 1 cup Greek Yogurt 1 Tbs Turmeric 1 Tbs Cumin 1 Tsp Oregano 1 Tsp Smoked Paprika 1 Tsp Garlic Powder 1 Tsp Cayenne Pepper 1 Tsp Basil 1 Tsp Thyme 2 Lemons Salt & Pepper to taste . SWIPE ➡️ FOR PHOTOS . To make the marinade, just add all the ingredients in a large bowl and stir to combine. Add Chicken, then mix to coat evenly. Cover and refrigerate for at least 1hr. . ProTip: The more time it marinades, the tastier it gets 🤤 I had some time this morning before work, so this bad boy had been marinating since 10am. . Preheat oven at 400F. To prepare the skewer, cut the onion in half and place face down on a baking sheet. . Place the skewer in the middle of the onion, layer each chicken breast until they are all stacked on top of each other. Bake for 45min or until Chicken is cooked to a temp of 165F.

The burgers are seasoned with Salt & Pepper brushed with Bbq Sauce on both sides before adding the Muenster Cheese and Tomato layers. (double cheese for me 😋) . The buns are slightly toasted in the Air Fryer and dressed with a Mayo, Ketchup & Mustard Combo. . Did I mention these are done in no time (which is very important because I was starving) and that they’re ridiculously delicious?! .
