Paris-Brest et tarte pomme-caramel, @lateliermuscade .
Expérience unique en son genre d'une ambiance "haute pâtisserie-PMU".

Je m'explique: niveau deco, il vaut mieux aimer l'ambiance Cocteau avec des bras démembrés qui tiennent, plus ou moins fermement, les luminaires sur fond mauve et foncé, le tout très fatigué et poussiéreux, de la salle aux WC. Le service est très lent et inefficace, les deux hommes présents passent leur temps au bar à discuter à vive voix, instaurant plutôt une ambiance café du coin et n'incitant pas à s'installer seul.e quand la salle est vide.
Les pâtisseries, très belles et soigneusement réalisées, sont éparpillées dans une triste vitrine blanche qui semble plus adaptée à accueillir des cornets de glace industriels. On n’en comprend pas très bien la sélection, très limitée par rapport à la boutique située à 50m (et non pas 10 comme indiqué par le serveur!). Certains gâteaux, comme le Mont-Blanc, n'y sont jamais proposés (Rajout: pour avoir demandé des explications depuis, on m'a dit avec un air d'évidence qu'il "suffit de demander et on va vous le chercher"; nulle part le menu ne fait-il mention de cela, les gâteaux à la carte ne sont que ceux proposés au salon - je trouve cette manière de faire assez peu professionnelle...). Au vu de la différence de prix, presque doublé des gâteaux, l'atmosphère, et, je l’oubliais presque, la piètre qualité du thé en lui-même, du "salon", je m'en tiendrai à la boutique dans le futur...

Car oui, je compte bien y retourner: la tarte pomme était vraiment délicieuse, ses goûts et ses textures francs, assez complexes mais maîtrisés. Certaines saveurs, comme le sarrasin, auraient pu ressortir davantage, mais bon. La texture et et le goût du chou étaient excellents, la pointe de sel très agréable; par contre sa crème manquait de force en praliné, qui, pur, était excellent et bien marqué.

No, I’m not comparing the two, but I AM comparing mentality regarding the two within our community!

Here’s something interesting to chew on: Tons of people are completely convinced that to drive their snatch and clean & jerk numbers up, they need more strength work. They want to Hatch or Smolov or hit heavy pulls until the cows come home. 🐄➡️🏡 But what about when it comes to their gymnastics? They believe they need more drills, more progressions, and more coaching.

What if the opposite is completely true? If you look at most peoples classic strength ratios, they have plenty of strength capacity for higher snatch and clean and jerk numbers. Which means that they are at a deficit of technique relative to their strength. On the gymnastics side, they might be at the limit of where their technique and skill can take them because they are simply too weak to make further progress. 🤯 What’s the test? Strict movement.

If someone is struggling to progress with a kipping movement that they can’t do strict, the big limitation is absolutely strength! If they are struggling to progress a movement that they can only do a small handful of technically flawed strict movements, the biggest limitation is still strength.

Minimum: For K2E, T2B, pull-ups, C2B, and HSPU, I’d want to see 3-5 quality, strict reps before getting into a bunch of kipping work. I’d also want 1 good, strict ring MU before moving into either kipping RMU or BMU. Better quality and higher capacity strict gymnastics will always benefit your kipping movements. However, there is FAR LESS carryover of kipping to strict.

At the @cfgymnastics seminar we preach strict before kipping not just for safety, but because it improves the learning process, makes technique work more productive, builds work capacity, and creates more hypertrophy 💪 (muscle gains)!
